Matcha Fettuccine with Fava Beans & Shrimp

Serves: 2

Ingredients

  • 7 oz. Fettuccine
  • ½  onion (minced)
  • 17 oz Fava Beans with pods
  • ¾ cup Shrimp
  • 3 tbsp Wine
  • 1.5 cup of cream
  • 2 tbsp of olive oil
  • 1 tbsp of butter
  • 2 tsp of matcha LOVE® Culinary Matcha powder
  • Salt & White Pepper to taste
  • Minced parsley (optional)

Group A:

  • 1 tbsp butter
  • 5 tbsp Parmesan cheese

Directions

  1. Remove the beans out of the pods. Boil the beans in lightly salted water and peel off the light skins.
  2. Devein the shrimp and boil until cooked. Peel off the shells, keeping the broth.
  3. Heat the olive oil and butter in a deep pot. Add minced onions and sauté until golden brown.
  4. Add the fava beans that you cooked in step 1 and sauté until the color of the beans turn bright.
  5. Pour in the white wine and simmer until the alcohol is evaporated.
  6. Add the cream and simmer for 30 seconds. Add a tbsp. of the broth from Step 2.
  7. Stir in the matcha, salt & pepper and shrimp from step 2.
  8. Cook the fettuccine separately to the desired consistency.
  9. Add the cooked fettuccine into the pot, then add the butter and Parmesan cheese from Group A in the recipe.
  10. Sprinkle minced parsley on top of the pasta when serving.
